Taking the form of a massive chef's knife, Sanji's shikai heats it's blade up to a massive degree, giving it the ability to burn or melt it's way through almost anything.

Bankai: "Hell's Kitchen"
Turning the heat up around him causes an endless amount of steam emerging from the ground that Sanji can control, molding it together into solid objects like blades and shields for defense. Though he is immune to the heat, the people and world around him are quickly drained by it, limiting how long he can sue it before causing major damage to the world around him.
